Matthew Whiting would best be described as a thoughtful person. That’s because he spends a lot of time thinking about how he can best serve the folks who come to visit and work with him at Katahdin Furniture and Toys. For Matthew every person who walks in the door is a person seeking a solution to something. Whether it is a relative looking for the perfect toy for a niece or grandchild, a college student seeking a lamp for their dorm room desk, or a homeowner who needs a sturdy dining table that will stand up to years of family dinners, homework and crafting, Matthew thinks about how to match the need with the product.

The name Katahdin pays homage to a majestic mountain range in Maine where Matthew enjoyed his summers growing up. Both beautiful and wondrous the name was fitting for an establishment that would carry items that would leave an impression on visitors and customers alike.

It may not surprise you to learn that early in life Matthew Whiting mastered the art of French cooking. As an accomplished chef, he knows how to create fine, rich, memorable tastes. When diners enjoyed his cooking, it was because it mattered to Matthew that he serve a meal that would meet or exceed the expectations of his clientele. This desire to make people happy would find its way from a high-end kitchen in New York City to quaint and welcoming store in New Haven, CT.

Matthew takes time to get to know his clients and customers. No matter how brief the time you spend with him, or how big or little your need is, Matthew will be working with you every step of the way. comfort food from France

Beef Bourguignon

4 lb(s) boneless stew beef, such as chuck or sirloin tip, cut into large chunks
2 Tbsp pork fat or olive oil, more if needed
2 carrots, peeled and halved
2 onions, peeled and halved
4 clove garlic, just crushed
¼ cup flour
1 bottle red wine
4 cup beef stock
1 bouquets garni (made from bay leaf, parsley stems, and thyme)
1 Tbsp olive oil, more if needed
6 to 8 slices bacon, cut into lardons
40 baby onions, peeled
1 lb(s) mushrooms

Step 1 of 3: Heat the oven to 325°F/160°F. Take the meat from the fridge and bring to room temperature, about 20 minutes. Heat the oil in a large casserole. Working in batches, brown the meat well on all sides, removing as you go. When the meat is done, cook the carrots and onions in the same pot until tender and lightly golden. Add the garlic, and cook one minute. Add the flour and cook for 2 minutes. Pour over the wine and the stock. Add the bouquet garni. Return the meat to the pot, cover, and transfer to the oven until the meat is very tender, about 2 hours.
